SENSORY PROFILE A wine with intense minerality and flavor with notes of freshness that make it elegant and lingering, Molino delle Balze is a white wine with a clear, bright straw-yellow color. It has a lingering scent of peach and apricot with a background of quince and acacia honey. It is a wine that is supple and enveloping on the palate. Its perfect balance ends with an excellent lingering finish. It is intended to be drunk soon, but will evolve over the next 5-10 years.
PAIRING White meat, fresh and medium-aged cheeses, fish of all kinds.

Climate: Mediterranean, tempered by the breezes from the sea, with a good broad day-night tempera-ture differentials on summer. Soil: alluvial, very deep, sandy-clay, medium rich of pebbles.PRODUCTION: Each homogeneous micro-particle of vineyard is harvested and processed separately, in a artisanal way, withthe utmost care and with the aim of enhancing the territorial characteristics of the grapes selected.The grapes are harvested in the early morning hours, destemmed and gently pressed within minutes of picking. The must iscleaned by natural precipitation, at low temperature overnight. At the end of fermentation, the wine remains on the fine leesfor at least 3 months, with frequent stirring. The summer season was normal, dry, with some extreme hotspells at the end of July. In August, the usual temperature range returned, with hotdays and cool nights. We harvested Vermentino on 5th September, a little earlierthan in previous years, under skies that were always clear and bright.CHARACTERISTICS: The pale yellow L’Airone 2023 initially presents aromatic notesof fruit (grapefruit, apricot and mango) and sweet floral ones (orange blossom andlinden); it then evolves towards hints of tea and peach, with a faint hint of breadcrust and pastries. In the mouth, it is medium-bodied and flowing, savoury and withgood freshness. It will evolve further, because an artisanal wine is alive and changeable

VARIETIES: Cabernet sauvignon, Syrah.vineyard: Our vineyards are located among the hills of Bolgheri, on the first slopes of the SegalariHill. They are in a little valley with an East-West direction, traversed by the Fossa di Bolgheri stream.We grow them with experience, care and attention to the environment, using the best practices ofthe sustainable viticulture.Climate: Mediterranean mild, dry and windy. Our valley has the cooler climate in the area and thelargest summer temperature ranges between day and night. Soil: alluvial, very deep, sandy-clayeywith some clayey putcrops, medium-rich in pebbles.PRODUCTION: Each homogeneous micro-particle of vineyard is harvested and processed separately,in a artisanal way, with the utmost care and with the aim of enhancing the territorial characteristicsof the grapes selected. The wine is aged for about 12 months in non-new wood, on the lees, withstirring weekly. It is then clarified with a series of racking (unfiltered). The final blending between particles is followed by 3-4months in steel. It is then aged in bottle for at least 12 months, in the best storage conditions.
VINTAGE 2021: it was an excellent vintage, even if very dry in summer. However, the intenserains of the winter period perfectly supported the vines throughout the production phase.For the rest, the summer was characterized by excellent ventilation, with average tempera-tures, except for short hot periods. Our vineyards have shown no signs of water stressthanks to our very deep alluvial soils, in which the vines have been able to develop a well-spread root system over time. We harvested the Syrah on September 20, and the Cabernetsauvignon in early October. This resulted in a very balanced and fresh wine with pleasantfruity aromas and intense spiciness.
CHARACTERISTICS: The nose presents notes of red fruit, wild strawberries and blackberries,violets, a hint between sweet and balsamic reminiscent of mango, with hints of pepper. Inthe mouth it is smooth and fresh, with good body and silky tannins. The wine is alive and willevolve its characteristics over time.

The final ageing in the bottle leads it to acquire a valuable elegance and persuasive taste
NOTES ON THE SELECTION OF THE GRAPES: The Chianti Classico de la Rocca reserve comes from the selection of the best grapes from the various company vineyards located in the Gaiole in Chianti area. This reserve does not have a dedicated vineyard precisely because we wanted to represent the diversity of the Gaiolese terroir expressed at the maximum quality thanks to the selection of the best grapes that the vintage has made available to us. The vineyards that make up this wine can vary from 350 to 480 meters above sea level whose soils are rich in Alberese, Galestro and to a lesser extent calcareous areas.

The taste is pleasant and balanced, with sweet, slightly aromatic notes typical of Malvasia Toscana. Good minerality and flavor which lengthen its finish.
